Syrups and fruit purées are what turn a drink into a cocktail, whether it contains alcohol or not. But how much do you need? Here's how many drinks one litre makes and how to work out the quantities for your party.
How many drinks does one litre make?
| Product | Per drink | 1 L makes | Price |
|---|---|---|---|
| Sugar syrup | 20–25 ml | around 40–50 drinks | ISK 3,290 |
| Flavoured syrups (strawberry, raspberry, green apple, vanilla) | 20–30 ml | around 33–50 drinks | ISK 3,890 |
| Passion fruit purée | around 60 ml | around 16 drinks | ISK 3,690 |
Lemonade and other large alcohol-free drinks usually take more syrup than a cocktail, around 30 ml per glass. A litre then makes around 33 glasses.
How to work out the quantities
- Estimate how many cocktails you'll serve. If cocktails are the main drink at a four-hour party, 2–3 per guest is a good starting point. See the drinks calculator for more.
- Split that number across the drinks on your menu.
- Divide by the number of drinks one litre makes and round up.
Example: 40 guests and 100 drinks. 60 of them are citrus cocktails with sugar syrup and 40 are passion fruit drinks. That means 60 / 45 = 1.3, or 2 litres of sugar syrup, and 40 / 16 = 2.5, or 3 litres of passion fruit purée. It's a good idea to have one spare bottle of whatever runs out first.
Storage
- Sugar syrup keeps for 3 years from production. It's vegan and free from preservatives. Any leftovers are great in coffee, iced tea and baking.
- Passion fruit purée should be kept in the fridge once opened and is best used within a few days.
